Raspberry Banana Nut Bread

What you need:

Wet-

2 eggs

1/4 cup almond milk

1 teaspoon vanilla

1 cup of mashed/ripe bananas (2 bananas)

1/2 cup butter or margarine

1 cup of white sugar

Dry –

2 cups all purpose flour

1 teaspoon of baking soda

1 teaspoon of salt

1/2 cup of chopped nuts (I used walnut)

 

1 small container of fresh raspberries – rinse and soak in water while you mix bread. drain. add to bread mixture.

 

Raspberry Glaze

1/2 cup of almond milk

1/2 tablespoon of honey

4-5 fresh raspberries (smashed)

1/2 – 1 cup of powdered sugar (add in 1/4 cup at a time, until smooth glaze reached)

*makes one loaf

step 1

preheat oven to 350 degrees. mix all the wet ingredients.

measure all the dry ingredients in a separate bowl. set aside.

slowly hand mix in dry ingredients until batter is well combined. it should look like thick cake batter.

spray a glass bread pan with cooking spray. fill bread pan half way.

add in fresh raspberries. gently push just below the surface. make sure they are all covered.

place in oven. bake for 50 -60 minutes or until a toothpick comes out clean.

while the bread is baking make glaze.

remove bread from oven. drizzle with raspberry glaze. let cool for 5 minutes and remove from pan. slice. enjoy.
