I don’t know about you but the garden has produced cucumbers on overload so cucumber recipes it is!
What you need:
1 large cucumber, sliced
1/4 purple onion, diced
1/3 cup pitted Kalamata olives
1 ear of fresh sweet corn, blanched
1/2 cup of cherry tomatoes
1/3 cup of soft goat cheese, chunk-ed
1/2 cup of rice vinegar
1/8 cup of water
1/4 tsp of dried dill
salt & pepper to taste
wash and dry all veggies and drain olives.
add water to a small pot. allow water to come to a boil. once water is boiling add shucked corn on cob to the water for 30 seconds. remove and allow to cool. this is called blanching.
it brightens the corn and soften the starchiness but allows you to return the crispness of the vegetable.
make dressing – mix a small bowl 1 cup of rice vinegar, 1/4 cup of water, fresh dill, pepper and salt. Cover. Set aside.
add all of the following to a large bowl-
slice cucumber into rounds.
thinly slice onion.
cut corn from cob.
add dressing to the large bowl. mix until well coated. place in fridge for 30 minutes to 1 hour to allow flavors to mix.
crumble goat cheese into clumps add to the top just before serving. enjoy!
