Tomato Artichoke Butternut Pasta


This is a quick and simple recipe that you can easily manipulate the ingredients so you do not get too bored.


What you need:

1 package of filled pasta- butternut squash

1 large can of diced tomatoes

1 jar of marinated artichoke hearts

parmesan cheese (optional)


step 1

cook pasta according to the package directions – removing & draining 1-2 minutes early. set aside.


step 2

open jar of artichoke hearts – drain & rinse. open can of tomatoes. add to the empty pasta pot. stir to combine. heat on low-medium for about 1 minute. return drained pasta to the pot. stir. allow to heat through.


swaps ideas

-switch out the pasta with a different stuffed/filled pasta

-swap artichokes for spinach, kale, squash, etc.  tabp-last
